There are celebrity chefs galore in Vegas these days, but who held court before Puck and Jean-Georges? Andre Rouchat, who came to town in the early '70s and is best known for the romantic restaurant Andre's in downtown Las Vegas. In 2003, he put his vision behind Alize at the top of the Palms, which has killer views of the Strip and excellent French fare to match. The space is elegant and modern, certainly a romancer's paradise. And the menu is drool-worthy: The pan-seared foie gras with crispy duck ravioli, creamy Maine lobster salad with English peas, and shallot-crusted Colorado rack of lamb with stuffed grilled eggplant all speak to Rouchat's immense talents.
